Prep time: 2 hours 30 mins (includes marination time)
Cooking time: 35 mins
10 fresh, grain-fed baby chickens, 500g each, cleaned (5kg in all)
fresh thyme, a bunch, chopped, plus extra sprig for garnish
100ml olive oil
salt and pepper, to taste
750g potato mash, prepared, kept warm, to serve
20ml truffle oil
1. To marinate chickens, mix together thyme, olive oil, salt and pepper. Use this to season the chicken inside and out. Refrigerate for 2 hours to marinate.
2. Transfer chickens and marinade to an ovenproof dish. Roast chickens in a preheated oven at 200°C until done; around 30 minutes. Remove from oven and transfer to a serving dish. Adjust seasoning and garnish with thyme sprig.
3. Season potato mash with truffle oil. Serve baby chickens with potato mash on the side.
